As it was announced that Claire Ptak from the Violet Bakery would be creating the Royal Wedding cake for the newlyweds, we immediately saw an opportunity for Mason Cash to get involved, as a firm favourite of bakers around the world. After sending out the Cane Mixing Bowls, we were delighted to see the bowls featured in the official photography released by Kensington Palace and The Royal Family in various sneak-peak scenes including videos and images taken from inside Buckingham Palace kitchens. The iconic Mixing Bowl was used to perfect the lemon and elderflower buttercream that surrounded the three tiered modern cake, with beautiful fresh flowers adorning the top and displayed on the most amazing cake stand we have ever seen! Lemon and Rose Cake

Ingredients • 160g plain flour • ½ tbsp baking powder • ½ tsp bicarbonate of soda

• 160g caster sugar • 1 tbsp rose water • 90g unsalted butter • 2 large eggs • Zest of 1 lemon • 95ml of buttermilk Topping • 225g unsalted butter • 500g icing sugar • 2 tbsp rose water • Juice of 1 lemon • Edible rose petals

(or fresh, to decorate only)

• 120 ml of double cream • 3 tbsp syrup

Method Step 1 – Preheat the oven to 180°C and grease your cake tins.

Step 2 – Sift the dry ingredients into your Mason Cash Cane Mixing Bowl and combine. Add the butter, and mix until the mixture resembles breadcrumbs. Then add the eggs one at a time until fully combined.

Step 3 – Add the buttermilk, rose water and lemon zest, and beat together until thoroughly mixed. Then divide the mixture between the two tins evenly and bake for 15 minutes.

Step 4 – For the topping, mix the rose water and syrup and drizzle over the cakes once baked, and let them cool.

Step 5 – To make the buttercream, whisk the butter and icing sugar, adding small drops of water if necessary. Whisk until light and fluffy.

Step 6 – Add the lemon juice and any food colouring (if using) to the buttercream and whisk for a further few minutes. Then, simply add the buttercream and jam (of your choice) and sandwich together to create your filling.

Step 7 – Dust a layer of icing sugar over the top layer and decorate with your edible (or fresh) roses, and enjoy!

Strawberry and Elderflower Cake

Ingredients • 150g granulated sugar • Zest of 1 lemon • 170g unsalted butter • 4 eggs • ¼ tsp salt • 1½ tsp baking powder • 1½ tsp bicarbonate of soda • 250ml plain yoghurt • 120g plain white flour • 150g plain wholemeal flour

Toppings: • 60g softened butter • 3 tbsp elderflower cordial • Juice of ½ lemon • 100g strawberries, chopped • 160g icing sugar • Elderflowers for decoration (remove before serving) • Couple of strawberries for decoration

Method Step 1 - Preheat the oven to 180°C, and grease and line your Mason Cash Original Cane 29cm Dish.

Step 2 – Combine the white and wholemeal flours, baking powder, bicarbonate of soda and salt. Set the dry ingredients aside.

Step 3 – Mix the sugar, butter and lemon zest together until combined. Beat in the eggs, one at a time, then stir in the yoghurt. Then, combine with the dry ingredients.

Step 4 – Pour the mixture into your dish and bake for 40 minutes until golden brown. To check its ready, use a skewer or cake tester and see if it comes out clean.

Step 5 – Once the cake is ready, mix your elderflower cordial with two tablespoons of water and drizzle over the warm cake. Leave to cool.

Step 6 – To make the buttercream, simply blend strawberries and lemon juice in a pan, then stir over a medium-low heat, stirring until fully reduced. Let it cool. This is your ‘jam’.

Step 7 – Finally, beat the softened butter with your cooled jam and mix in icing sugar until a smooth consistency. Then spread over your cooled cake and top with strawberries and elderflowers for decoration!
